But we were hungry....<\/p><\/div>\n<p>Totally delicious!<\/p>\n<p>Ingredients:<\/p>\n<p>1\/4 cup olive oil<br \/>\n1\/3 cup chopped onion<br \/>\n1\/4 tsp. garlic powder<br \/>\n2 medium baked potatoes, peeled and cut into chunks<br \/>\n1\/3 cup chopped broccoli, lightly steamed<br \/>\n1\/2 cup lightly steamed Swiss Chard (I had some frozen from our garden)<br \/>\n1 tsp salt<br \/>\nblack pepper to taste<br \/>\n1 12 oz package firm tofu<br \/>\n1\/4 cup soy sauce<br \/>\n4 tbsp nutritional yeast<br \/>\ncheese (optional) &#8211; I skipped this<\/p>\n<p>Preparation:<br \/>\nPreheat oven to 325 degrees. In a large frying pan, sautee the onions<br \/>\nand garlic powder in olive oil for 2-3 minutes. Add potatoes, salt and<br \/>\npepper, and sautee for a few minutes, stirring occasionally until<br \/>\npotatoes are golden brown.\u00a0 Since they are already cooked you&#8217;re just<br \/>\ngiving them a bit of color and heating them up.\u00a0 Once this is all<br \/>\nheated, add salt\/pepper and any other vegetables.\u00a0 If you want<br \/>\nmushrooms, slice them and add them to the onions at the beginning.<\/p>\n<p>Other ideas: \u00a0 add sliced mushrooms, squash, green onions, sliced olives, fresh tomatoes, green beans, asparagus, pretty much anything.\u00a0 Just reduce the amount of potatoes a bit if you want to add a lot more vegetables. \u00a0 If you like more garlic, you can use up to 4 cloves of fresh garlic, crushed.<\/p>\n<p>Blend tofu, soy sauce, and nutritional yeast in a food processor or<br \/>\nblender until well mixed. Mixture will be somewhat thick. Add to the<br \/>\npotatoes and vegetables mixture, stir to combine and pour into a greased<br \/>\npie pan.<\/p>\n<p>Cook 45-50 minutes, until top is firm and cooked all the way through.<\/p>\n<p>While your frittata is still hot, sprinkle the top with cheese if<br \/>\ndesired.
