Today I made a batch and just pulled them from the oven.<\/p>\n<div id=\"attachment_1071\" style=\"width: 470px\" class=\"wp-caption aligncenter\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-1071\" class=\"size-full wp-image-1071\" title=\"englishmuffins\" src=\"http:\/\/mtnmacaw.files.wordpress.com\/2009\/09\/englishmuffins.jpg\" alt=\"English Muffins\" width=\"460\" height=\"300\" srcset=\"https:\/\/redmeadow.com\/wp-content\/uploads\/2009\/09\/englishmuffins.jpg 500w, https:\/\/redmeadow.com\/wp-content\/uploads\/2009\/09\/englishmuffins-300x196.jpg 300w\" sizes=\"auto, (max-width: 460px) 100vw, 460px\" \/><p id=\"caption-attachment-1071\" class=\"wp-caption-text\">English Muffins<\/p><\/div>\n<p>They are made with a light rice flour mixture, some garbanzo bean flour added for protein, and instead of shortening the recipe called for a nut butter.\u00a0 I used a crunchy almond nut butter this time.\u00a0 These are a yeast bread just like normal English Muffins.\u00a0 I think they will be very good when they are split and toasted and have some margarine and orange marmelade on them.<\/p>\n<p>Yesterday for dinner I fixed one of my oldest recipes from my collection.<\/p>\n<p>Baked Lentils and Cheese<\/p>\n<p>In a baking dish combine:<\/p>\n<p>1-3\/4 cups rinsed lentils<br \/>\n2 cups water<br \/>\n1 large onion, chopped<br \/>\n2 cloves garlic, crushed<br \/>\n1 pound can whole tomatoes, chopped<br \/>\n1\/8 teaspoon marjoram<br \/>\n1\/8 teaspoon thyme<br \/>\n1\/8 teaspoon sage<br \/>\n1 teaspoon salt<br \/>\n1\/4 teaspoon ground black pepper, or more if you like it a lot<br \/>\n1 whole bay leaf<\/p>\n<p>Cover the baking dish tightly with foil and bake at 375F for 30 minutes.<br \/>\nRemove the foil and add the following ingredients to the baking dish<br \/>\nand stir them in:<\/p>\n<p>2 carrots, thinly sliced<br \/>\n1\/2 cup thinly sliced celery<\/p>\n<p>Return the baking dish to the oven and bake another 40 minutes,<br \/>\nuncovered.<\/p>\n<p>Remove the baking dish once more and stir in:<\/p>\n<p>2 tablespoons dried parsley<br \/>\n1 whole green pepper, seeded and chopped finely<\/p>\n<p>Then cover the top of the baking dish with 3 cups (10 ounces) shredded<br \/>\ncheddar cheese.<\/p>\n<p>Return to the oven once more for another 8 minutes, until the cheese is<br \/>\nmelted and bubbling.<\/p>\n<p>I made this without cheese and it is equally as good.\u00a0 Yes, I keep telling myself that about recipes which call for cheese and which I now leave out.\u00a0 Who knows, someday I might even buy into that theory!<\/p>\n","protected":false},"excerpt":{"rendered":"<p>There is a recipe in my new gluten-free cookbook that has intrigued me since I read it.
